My Kerala Spicy Chicken Fry Recipe Story | Young Chef

My name is Allan , and yes — that’s me in the photo, holding super crispy, super spicy chicken fry that I just made in our kitchen!

I’m so happy today because this is the first time I made Kerala spicy chicken fry almost all by myself, and it turned out even better than I dreamed. The smell filled the whole house — curry leaves, red chilli, pepper, everything frying in coconut oil… mmm! My amma (mom) and everyone came running to taste it. They said it’s the best nadan chicken fry they’ve had in a long time. That made me smile so big!
How I Learned to Make Kerala Spicy Chicken Fry Actually, I’ve watched my grandmother and amma make this so many times. They always say the secret is in the masala and not to rush the frying. So today I decided: I want to try it too!
I asked amma for permission, washed my hands really well, and started. She helped me with the measurements the first time, but I did almost everything — mixing the masala, marinating the chicken, and frying it carefully so it doesn’t burn.
My Simple Steps for the Crispiest Chicken Here’s exactly what I did (it’s really easy, you can try it too!):
- I took fresh chicken pieces — drumsticks and thighs — because they stay juicy.
- I mixed red chilli powder, turmeric, coriander powder, lots of black pepper, ginger-garlic paste, a little curd, and salt. Rubbed it all over the chicken and let it sleep in the fridge for 2 hours.
- Then I heated coconut oil in our big kadai (that’s the pan you see in the photo).
- I fried the pieces on medium flame till they became golden and crispy outside — you have to turn them gently!
- At the end, I threw in lots of fresh curry leaves and a squeeze of lemon. That’s when the magic happens — the house smells like heaven!
Took me less than one hour total, and now I feel like a real Kerala chef. 😄
Why I Think Everyone Should Try This at Home This dish is not just food — it’s full of Kerala love. Every bite has the taste of our home, our spices, our coconut oil, our curry leaves. When you come to Kerala one day, you must eat this in someone’s house, not only in restaurants. But until then, you can make it just like I did!
